Each year as time for K Days comes around, our raspberries ripen and become ready to pick. Even in the heat this morning it was enjoyable and really satisfying to fill ice cream buckets with ripe berries. Picking will continue every couple of days as more berries ripen.
We’ve had our smooth cane berries for many years.The originals were given to us by Roy Peterson. He said they need “cold feet” which means keep them watered. New canes grow in first year and bear fruit the second year before dying off and being removed in the off season. New growth this year will bear fruit the next year. Other than thinning canes, fertilizing in the spring, and ensuring they get water, we just wait and pick as the fruit ripens.
We’ve had raspberry and banana jello this week, I’ll try my hand at raspberry pie, and our all time favourite is homemade raspberry ice cream. We served angel food cake with fresh raspberries and whipped cream to the family for dinner last Sunday.
My last years attempt at Raspberry Jam didn’t go great as it didn’t thicken enough. We’ve also found that freezing the berries makes them a little bitter when thawed. But we’ve used the frozen berries to flavour punch and it works okay. The great thing is we get to try new things each year.
